Equipment

Eddyline "Shasta"

Designed as a double or roomy solo kayak and recommended by Andy Bugh who paddled the same craft from the headwaters of the Missouri River to the mouth of the Mississippi River at the the Gulf of Mexico in 2011/12.

I like the open cockpit design and the fact that it is a stable vessel and already proven on the Missouri River.

Hubba Hubba (MSR)

This is the Hubba Hubba from MSR  that we used on our PCT hike in 2010; one of our better buys. It is easy to setup and pack away by one person, plenty of room inside for two with space outside between the inner and outer tent for muddy boots etc and reasonably light to carry(~ 2kgs). We particularly liked the having doors on both sides so we didn't have to climb over one another to get in and out. It also has a "bathtub" floor design that prevent any water flowing over the ground from getting inside due to the sealed, built in floor and the zipped doors being ~6 inches off the ground.

Big Agnes +15 F (-9 C)

Used this on the Pacific Crest Trail in 2010 and it was very warm even in the snow in Oregon and at high altitudes in the Sierra. I move about a bit at night so the square vs the mummy design is more comfortable for me. Two bags can be zipped together if you have alternate L and R zips; we thought it would be nice and cosy but we never bothered once in 5 months - honest.
